Baker Luiz André Alvim started Bike Bakery as a bicycle bakery in Rio de Janeiro. Now it is a 33-square-metre shop in a tiled building in the Bica, beside the funicular, with breads fermented for 24 to 72 hours from stone-milled flour from Alenquer.
