Tokyo-born chef Shin Koike, who built his career in Brazil and came to Lisbon in 2018, runs a 14-seat room near Parque Eduardo VII. His omakase goes beyond sushi: starters, sashimi, grilled dishes, nigiri, rolls and soup from a pool of about 20 dishes that change with the market.
