The Abu Dhabi branch of a hummus and foul house founded in Irbid, Jordan, in 1952. Hassan Qasmieh works the station by the door between a vat of Palestinian olive oil, pickled chillies and four stockpots of beans, calling out falafel orders the way his grandfather and father did (The National).
