Yoka Kamada started with makis and nigiris in a two-square-metre stall in the Mercado de Antón Martín and built a Japanese tavern where all the cooks are Japanese. Order the tonkotsu ramen simmered for 12 hours, chicken gyozas, the sushi set and sake; there is now a second, sit-down room on Plaza de Matute.
