A taberna of 1827 on the site of the house where Cervantes wrote the second part of the Quijote. Look for the zinc counter, the onyx-and-wood bar, the soda-siphon gauge and the old till. Drink the house vermut de grifo at the bar; at the tables, order the callos (equal parts tripe and snout) and the rabo de toro.
