George Svanias, son of the Strofilia founder, recreates the pita that Asia Minor refugees made popular in Greece in the 1920s: paprika-marinated pork loin carved to order in thick Greek bread grilled over an open flame, with tomato, red onion, parsley and a house tomato-pepper sauce. BRUZZ called it purist street food.
