Since 1980 the Pereira family has roasted suckling pig in its own eucalyptus-fired brick ovens by the railway line, which is rare in Lisbon, where most leitão is trucked in from Bairrada (Culinary Backstreets). Bairrada rules: crackling skin, peppery sauce, crisp sliced potatoes; Time Out also praises the veal chop.
