A family bar in Quintana since 1963 and Madrid's patatas bravas institution: Guía Repsol reported about two tonnes of potatoes a week, with a secret sauce poured from recycled whisky bottles. Locals also order the oreja a la plancha with the same sauce. In 2025 it won the Comunidad de Madrid tapas championship.
