Local cuisineLocals' pick

The Hevia brothers (of Hevia and Bar H) rebuilt the old Madrid colmado: a bar next to a shop counter full of good tinned fish, embutidos and cheeses, with a non-stop kitchen over two floors. Locals use it from breakfast with churros and porras to an aperitivo of callos, rabo de toro, albóndigas or chipirones en salsa.
