A small brick-walled wine taberna between Ópera and Mayor with a fixed ritual: cocido madrileño every Thursday, and croquetas de pringá made from it. The Japanese chef Kenji Morita mixes Madrid dishes with a few international plates, and three sommeliers run a deep list (Jerez, Burgundy).
