Federico Sisti, formerly of the Ronchettino, cooks at a counter facing the brigade, from the owners of Kanpai and Osteria alla Concorrenza. His boneless cotoletta of thick fillet, fried in butter and finished with veal jus, is one of the most indulgent in town; wine and cocktails are excellent.
