Opened in 2014 by Aurélie Panhelleux, Elfi Fabritius and Julien Lopez, CopperBay is a bright yacht-club room of light wood, copper and rope walls, unlike the dark speakeasies around it. Time Out calls it one of the flagships of Paris cocktail-making: inventive textured drinks, pastis and the classics.
