Giovanni "Gianni" Antonelli has made stuffed pizza bianca for decades in Primavalle, filling it with about forty of his own preparations: frittate, cooked greens, homemade mayonnaise. The pizza is baked directly on the oven floor, "al mattone", which gives the place its name.
