Bartender Alberto Fernández, from Cádiz and formerly of Saddle, opened this cocktails-only bar in Chueca in 2022: no beer, no wine, no food. Six months in it earned a Top Cocktail Bars star; the menu describes each drink with geometric shapes for its flavours, and the bar sits 15 cm above the room so you can watch the work.
