Madrid's first inn of the Court (1642), on the site of the city's only flour mill, rescued in 1980 as a horno de asar. Two things to order: the cocido madrileño cooked in clay pots over a low fire and the cordero lechal roasted in the wood oven, eaten in timber-beamed rooms over three floors.
