The third Chartier, opened in April 2022 opposite Gare de l'Est in a 1900-style room by decorator Pierre Canot, with waiters in traditional dress. Same bouillon formula as the 1896 original: a full meal under EUR 20, with fewer tourists than on the Grands Boulevards.
