The Ashkenazi bakery-deli of the Pletzl, at the corner of rue des Rosiers and rue des Écouffes, behind a blue faience shopfront classified as a historic monument in 1932. Florence Kahn, trained at Finkelsztajn, took over Monsieur Perelman's bakery in 1988 and still bakes challah, water-boiled bagels, cumin bread and rogalik.
