The family freiduría near the Pradera de San Isidro, now run by the grandchildren (Berta, Rami and Chabeli Gutiérrez), is one of the last places defending gallinejas and entresijos: milk-fed lamb, fried in its own fat. Pair them with a caña, the castizo way, or try zarajos, madejas and chicharrones.
