A stall in Vallecas' Mercado de Numancia run by cook Chema de Isidro and pastry chef Paula Beer, whose torrija won best traditional torrija of the Comunidad de Madrid 2026 (ACYRE). It is made with house brioche soaked in milk infused with cinnamon, lemon and orange, and caramelised in butter instead of fried. The stall also trains and hires people seeking reinsertion.
