Alex Francis and Barney O'Kane left Little Red Door to open their own counter off rue Montorgueil: a ceramic bar, two blond-wood tables and a seasonal list that changes almost daily, built for pairing with Irish chef Adam Purcell's small plates. It is the Paris bar the international lists keep rewarding for both taste and sustainability.

Good to know
- Book for the five-drink tasting menu; for one or two cocktails you can walk in, but the small room fills fast.
- Ask for the drink of the day rather than picking from the long list.
- Snacks such as the chicken-liver parfait with strawberry scone are worth ordering.
