Opened by Sacha Hormaechea's parents in 1971 and run by him like his own living room: a cluttered old salon tucked behind an apartment block, with a short handwritten-style menu that Madrid's chefs and food writers treat as a pilgrimage. The bone marrow (tuétano) is the house grail; the 'tortilla vaga' and the false txangurro lasagne are the other classics.
