A tiny pastry shop opened in spring 2025 on a quiet street between Goncourt and Belleville by Adrien Cusson, a former chemical engineer, who gives French classics a travelled twist: shiso on the fig tart, mélilot instead of vanilla in the flan. Time Out and Sortir à Paris both found it on their own and praised its balance.
